Our Story
In the heart of ancient Rome, where culinary artistry and divine influence intertwined, Edesia, the Roman goddess of feasting, played a pivotal role in shaping the empire’s vibrant dining culture.
As a cherished deity, Edesia inspired not only the elaborate banquets of the nobility but also the daily meals that celebrated the joy of togetherness and abundance.

Meet the Artisans
Alessandra and Davide
Uncover the story behind one of Edesia’s most sought after products, truffle salsa (tartufata).
From a line of true pioneers in truffle products, find out more about how 3rd generation, Alessandra, along with her husband Davide and son Gian Marco, are sustaining the family legacy in the Umbrian region, where it all began.
Alessandra Olivieri, a proud third-generation custodian of her family’s culinary heritage, embodies a rich tapestry of expertise rooted in the finest foods that the Umbrian region has to offer.
The remarkable story begins with her grandfather, Natale, a determined young man, who in the 1940s, moved from his small town near Norcia to Foligno. There, he began working in a butcher shop.
After years of saving and planning, he was able to open his own modest shop during the vibrant decades of the 1940s through the 1960s. In those formative years, Natale skillfully traded specialties from his hometown of Norcia – a verdant area celebrated for its abundant produce and artisanal traditions, offering cured meats and other local products.
The Cassetta Family
Surviving two world wars, perseverance and entrepreneurship are key to history of Edesia’s extra virgin olive oil from the Puglia region.
Expertly cultivating for the over 125 years, the Cassetta Family continue to adapt and modernise, whilst honouring artisanal methods, to provide the highest quality oil.
In the heart of the lush Puglia region lies Andria, a town steeped in history and tradition. Here, the Cassetta family has cultivated a remarkable legacy in olive milling.
Nestled among ancient Coratina cultivar trees—renowned for their resilience and versatility—the family benefits from an ideal environment that yields plump olives with an oleic acid content nearing 80%.
This unique combination positions them perfectly to produce exceptional extra virgin olive oil sourced directly from their own groves.
